Yesterday was my last day at Freedmen’s. Starting in October of 2012 I started fires, rubbed ribs, sliced brisket, and cased sausage at 2402 San Gabriel St. for 40-80 hours per week. I grew in both waistline and maturity. I traveled the world. I tried my best to make great barbecue and make people happy. I always knew it would come to an end and I never, ever looked forward to that day. But the time has come to move on, turn the page, and light the next fire.

 

I want to say thank you to every person who ever worked with me at Freedmen’s. Cooks, dishwashers, servers, hosts, bartenders. Your hard work was appreciated more than you know.

 

In the next few months I’ll be popping up at some of my favorite places in town and around the country, collaborating on barbecue-influenced dishes, teaching some private classes, and working on opening a new kick-ass barbecue joint.
